Baked Macaroni and Cheese

Baked Macaroni and Cheese

INGREDIENTS

  • 1 (12 ounce) package macaroni
  • 1 egg
  • 2 cups milk
  • 2 tablespoons butter, melted
  • 2 1/2 cups shredded Cheddar cheese
  • salt and pepper to taste

DIRECTIONS

  1. Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a 2-quart baking dish.
  2. In a large pot of salted water, lightly boil the macaroni for about 5 minutes until half-cooked.
  3. Whisk the egg and milk together in a large cup. Add butter and cheese to the egg and milk. Stir well.
  4. Place the lightly cooked macaroni in the prepared baking dish. Pour the egg and cheese liquid over the macaroni, sprinkle with salt and pepper, and stir well. Press the mixture evenly around the baking dish.
  5. Bake uncovered, for 30 to 40 minutes, or until the top is brown.

Sugar Topped Ginger Cookie Recipe

Ingredients

  • 3/4 cup shortening
  • 1 cup sugar
  • 1 egg
  • 4 tbs. molasses
  • 2 cups flour
  • 1 tsp. salt
  • 2 tsp. baking powder
  • 2 tsp. baking soda
  • 1 tsp. cinnamon
  • 1 tsp. cloves
  • 1tsp. ginger

Instructions

Cream sugar and shortening, blend in egg and molasses. Sift all dry ingredients and add to egg mixture. Blend until moistened. Roll in small balls and coat with sugar. Place on a greased pan and back at 350 for 10-12 minutes.

Shortbread Cookie Recipe

Ingredients

  • 1/2 cup corn starch
  • 1 cup flour
  • 1/2 cup icing sugar
  • 3/4 cup butter

Instructions

Cream butter and sugar, then add remaining ingredients. Mix well. Roll out dough on a floured surface until dough if 1/8 inch think. Cut into shapes with cookie cutters. Sprinkle with coloured sugar, sprinkles or silver candy balls. Bake on an ungreased pan at 300 for 20-25 minutes.

Ingredients

  • 3/4 cup white sugar
  • 3/4 cup brown sugar
  • 1 cup butter
  • 1 egg
  • 2 1/4 cup flour
  • 1 tsp. baking soda

Instructions

Cream butter and sugar together. Add egg and mix until blended. Add remaining ingredients and stir/mix just until ingredients are blended together. Bake at 375 degrees for 8-10 minutes.

Double Chocolate Pudding

Double Chocolate Pudding

Ingredients:

2 tablespoons Dutch-processed cocoa powder
2 tablespoons cornstarch
2/3 cup sugar
1/8 teaspoon salt
1 cup light cream
3 large egg yolks
2 cups whole milk
6 ounces bittersweet chocolate, melted* (see note below) and cooled slightly
1 tablespoon unsalted butter, softened
2 teaspoons vanilla extract

Instructions:

To melt the chocolate, chop and place it in a heatproof bowl set over a pan of almost simmering water, stirring once or twice until smooth. You can also melt the chocolate in a microwave at 50 percent power for 3 1/2 minutes, stopping to stir after 2 minutes. If the chocolate is not yet completely melted, heat up to 30 seconds more at 50 percent power.

1. Sift cocoa powder, cornstarch, sugar, and salt into large heavy-bottomed saucepan. Slowly whisk in light cream, followed by yolks, then milk. Stir in chocolate. (Chocolate will form clumps that smooth with cooking.)

2. Bring mixture to boil over medium-high heat, stirring constantly with whisk, scraping bottom and sides of pot. Pudding will gradually darken and thicken. Reduce heat to medium and cook, stirring gently but constantly with wooden spoon until pudding very thickly coats spoon or instant-read thermometer registers about 200 degrees, 1 1/2 to 2 minutes.

3. Pass pudding through fine-mesh strainer into medium bowl, pressing with rubber spatula. Leave residue in strainer. Stir butter and vanilla into pudding. Serve warm or directly cover surface of pudding with plastic wrap, cool 30 minutes, and refrigerate.

Serve with whipped cream, if desired.

Makes 4-6 servings.

INGREDIENTS

8 oz. Cheddar cheese
5 oz. salted potato chips
1 c. flour
1 tsp. dry mustard
Pinch of cayenne pepper
6 oz. butter, melted

METHOD

Grate the cheese, crush the chips and place them in a bowl. Sift in the flour, mustard and cayenne and mix until evenly blended. Stir in the butter, then mix lightly to form a dough. Divide into tablespoon-sized pieces and shape into rough heaps on a baking sheet. Flatten a little. Bake in a preheated oven at 375 degrees for about 15 minutes, until lightly browned. Push back together with a knife if the cheese has spread out. Leave on baking sheet for 3 to 4 minutes, then cool on wire rack.
