Chicken Breasts with Mozzarella Cheese

Ingredients:
- 6 pieces boneless breast of chicken
- 4 tablespoons olive oil
- 2 tablespoons butter
- 1 clove garlic
- 2 eggs
- 1 bouillon cube
- 1 can chicken broth
- 6 slices of Mozzarella cheese
- Bread crumbs
Directions:
- Dip boneless, skinless chicken breast in bread crumbs and eggs.
- In a large skillet, heat olive oil, butter, garlic and melt bouillon cube. Make sure to put heat on low so oil doesn’t burn.
- When oil is hot, brown chicken on both sides in oil, increase heat so chicken gets nice and brown on both sides, lower heat and add chicken broth. Simmer until hot.
- Add Mozzarella cheese to top chicken.

Chicken Everest

INGREDIENTS:
- 1 X 1.5 kg (3 lb.) roasting chicken
- 2 cloves garlic, crushed
- 2 teaspoons finely grated fresh ginger
- 1 half tablespoons curry powder
- l teaspoon paprika
- 2 teaspoons salt half teaspoon ground black pepper
- 2 tablespoons lemon juice half teaspoon ground curry leaves
- 2 teaspoons light soy sauce
- 2 tablespoons oil
- 2 tablespoons ground rice little warm water
- 2 tablespoons finely chopped spring onion
- 2 tablespoons chopped fresh coriander leaves Wash and dry chicken well.
METHODS
Combine all other ingredients with sufficient warm water to make a paste of spreading consistence Rub this paste inside and outside the chicken. leave for 1 hour. Roast in a preheated moderate oven 170_C (350_F) for 1 1/4 hours or until chicken is done.

African Chicken

Ingredients
4 lb chicken pieces
1/4 c vegetable oil
1 ts salt
1 ts curry powder
1 lg onion, peeled and sliced
1 lg sweet red pepper, cut in -strips
1 lg onion
1 lg sweet red pepper
1 lg tomato
1 1/2 c uncooked rice
1/4 c crunchy peanut butter
1/4 c warm water
Instructions
Brown chicken in vegetable oil in large frying pan. Set aside.
Remove all but 2 tablespoons of oil and drippings in pan. Stir in
curry powder and salt. stir in onion, red pepper, and tomato. Cover
and simmer 5 minutes. Return chicken to pan. Cover. Simmer until
chicken is tender. Remove chicken to large platter. Blend peanut
butter and water. Stir in vegetables. Heat to boiling. Spoon over
chicken. Peanuts are common in the African cuisine.
